Breakfast Ideas 

Overnight peanut butter oats

Ingredients 
1/2 cup of milk (dairy or non dairy alternative)
2 tbsp. of peanut butter
1 tbsp. of maple syrup
1/2 cup of oats 
Method
Mix all the ingredients and leave in the     fridge over night, serve with a chopped banana

Cashew butter overnight oats

Ingredients
1 cup of oats
1 cup of oat milk
2 tbsp of cashew butter
1 tbsp of maple syrup
1 tsp of chia seeds
Method
Mix all the ingredients then place into a container in the fridge and leave overnight (makes 400g)

 

 

Lunch/Dinner Ideas

Chicken Satay

Ingredients
1/2 a tin of coconut milk
2 tbsp of peanut butter
Method
Pour into a saucepan and cook on a low heat for 10 minutes.
 

 

 

 

Snacks

Cashew butter bliss balls

Ingredients
1/2 cup of cashew butter
1/2 cup of dates
1/4 shredded coconut (with a little extra for rolling)
Method
Blend all the ingredients together until they bind. Roll into balls using the extra shredded coconut. (makes approx. 12 balls)

Banana and hazelnut & cacao butter sandwiches 

Ingredients
1 Banana
1 tbsp. of hazelnut & cacao butter
Method
Slice the banana into rounds, spread one round with hazelnut & cacao butter, put another round on top, slice into halves. 

 

 

 

Oat and almond butter bars

Ingredients
1 1/2 cups of oats
1 cup of dates
1/2 cup of almond butter
Method
Roast the oats in the over for 15 minutes at 170C. Place oats, dates and almond butter in a blender, blend until they have mixed together, press into a dish and place in the fridge for a couple of hours. (makes approx. 12 bars)

Blueberry, oat and cashew butter bars

Ingredients
1/2 cup of dates
1/2 cup of dried blueberries
1/2 cup of oats
2 heaped tbsp of cashew butter
Method
Blend all the ingredients  until they are combined and then press into a lined tin and chill for an hour and then cut into bars.

 

Apple donuts

Ingredients
1 apple
Cashew Butter
1 tsp of cinnamon
2 tsp shredded coconut
Method
Core the apple and slice them into rings, sprinkle with cinnamon. Bake in the oven for 20 mins at 180c. Spread with cashew butter and sprinkle with shredded coconut.

 

Baking & Treats

Hazelnut & cacao banana bread

Ingredients
3 ripe bananas
180g self raising flour
1 cup of dates
180g butter
2 eggs
1 tbsp. maple syrup (not essential) 
4 tsp hazelnut & cacao butter
Method
Add all the ingredients bar the hazelnut & cacao butter to a blender and blend to combine. Pour into a lined cake tin, dollop the hazelnut & cacao butter on top and swirl into the batter. Bake in the oven for 35 minutes at 180C. Take the cake out and test its cooked (stick a knife into the middle and it should come out clean).
 

Hazelnut & cacao bliss balls

Ingredients 
1/2 cup of oats
1/2 cup of mashed dates
3 tbsp. of hazelnut & cacao 
Method
Mix all the above ingredients together and roll in to balls (makes about 15).
